With its rich and herbaceous flavor and hints of mushroom, this exceptional Brie carries a pronounced aroma, buttery texture and deep flavor. Sounds a bit like falling in love?
Brie de Meaux is perfect paired simply with fresh baguette rounds and fresh berries. Or, if you fancy something a bit different for your love night, throw a lucious tasty tart in to the mix. Brie de Meaux as the star of your tart will have your Valentine purring with satisfaction. Soooo simple, and so very good!
Brie de Meaux and Onion Tart Heart
– Puff pastry
– 3-4 onions
– 8 ounces Brie de Meaux
Preparation: Chop the onions into large pieces, and fry slowly in butter at a low heat, until soft and slightly browned. Unroll the pastry (or roll it, if you are making it yourself). With large heart cookie cutter cut puff pastry in heart shape. Spread the onions out on the pastry. Cut the cheese into chunks about 2cm across, and spread these evenly across the tart. Cook for about 20 minutes at 220 degrees. The cheese will have melted, and flowed into the onions and pastry.

It’s officially BBQ Season. Are you ready? Here are some quick tips on making the most of your grill and getting the best flavor out of your meat, fish and poultry:TIP ONE: Meat Rubs.
If you like your meat juicy, tender, and flavorful, there is one simple ingredient that can improve all three: Salt. Salt is a flavor amplifier, it suppresses the impression of bitterness, and it actually expands your taste buds. A blend of spices and herbs, it delivers more flavor per square inch than any marinade.
Spice Rubs not only add tons of flavor (more flavor per square inch than marinating), they also help create that perfect crust and seal in juices. Also, if you’re in a hurry, a dry rub will permeate the meat faster than a liquid marinade.
How to use a Spice Rub? Apply it a few hours before cooking or even a day in advance. It is a good strategy to work the rubs under the skin of chicken and turkey.

TIP TWO: Marinating & Injecting.
The big issue with marinades is that they don’t penetrate very deeply. However, there is great benefit even as a surface enhancement, as they help with browning and adding flavor, color and terrific aromas. The surface enhancement also help with browning and crust formation.
A more effective method to truly tenderize, flavor and penetrate the meat is to inject the marinade using a tool that you can get at any kitchen supply store. By injecting, you add moisture and flavor. Injecting also effectively drives flavor down toward the center of the meat.

TIP THREE: The Secret is in the Sauce.
Pack in lots of flavor with a BBQ sauce which goes on just before serving.
Depending on the cooking temp and the type of sugar, a sweet sauce can get gummy or even burn. So apply the sauce at the end of the cook, just long enough to heat it and cook it without burning it. Also, most sauces benefit from baking on the meat. If you’re finishing your ribsTry low and slow at about 225°F, adding the sauce a30 minutes before removing the ribs.

Fresh off the presses: Cinnamon flavored products is emerging as one the bigger trends of the Sofi™ Awards, Specialty Food’s highest honor; so says Denise Purcell Editor of Specialty Food Media for the Specialty Food Association, who is also one of the award judges.
While it’s hardly possible to claim this ‘trend’ as new, since Cinnamon has been floating around since biblical times, it is believed that this spice that is the bark of a small evergreen tree originates from Sri Lanka and has been shown to help with glucose tolerance in diabetics. It is an ingredient that crosses cultures, and that can be applied to savory foods like curry to sweet dishes like pies, ice creams and confections.
So jump on trend, and experiment with our Cinnamon products; we’ve also got ground cinnamon and cinnamon sticks in our spice department.

What is special about the Todaro Bros. new Signature Line? Peter Todaro speaks in depth about the inspiration behind our new ‘Signature Line’ of products and what’s fueling the continuing legacy and success of Todaro Bros.
What was your inspiration for creating the Todaro line of products?
Confidence in our selection. With nearly a century of experience and research in fine imported and domestic ingredients, we have created an exciting line of quality products that we are proud to put our name behind.
This background has allowed us to make decisions based on what we know will captivate and satisfy our customers. ‘Todaro’ has always been synonymous with dependability, diversity, quality and service, and our new Todaro Bros. Signature Line embodies these trademark attributes, as well.
What are your favorite products in the line and how do you use them?
My personal favorites are the steak and BBQ sauces; these are some of the best I’ve tasted. I use them at home and whether using as marinades or toppers, they are each great, flavorful, and easy to use. I am a big fan of having a pantry full of key products such as these that just make creating top dishes a relatively effortless task. I am very proud of these, as I am everything under our Todaro Signature Line. However, I believe the proof is in the personal experience and I urge our customers to give them a try – I know they’re going to love them.
Is there a product that you feel deserves special culinary recognition, and why?
For versatility and unique quality, Todaro Bros. Signature Balsamic Sweet Onion Jam is just outstanding. The jam’s complex sweet-savory balance is perfect for cheese and crackers, a top cream cheese for dipping or a spread on a sandwich. It also makes a great glaze for roasted or grilled poultry or pork, or by itself, as a side to lamb or beef. The product is simply made with quality ingredients: Balsamic vinegar from Modena, Italy, dark brown, pure cane sugar and Vidalia sweet onions, everyone I know who’s tasted this product agrees.

I am proud of the Todaro Bros. name because we are innovators who have maintained the confidence and respect that we earned since our inception.
